Questions About Pruning A Phalaenopsis Stalk And Aerial Roots

I have questions about pruning a Phalaenopsis stalk. Do you have to prune it? Do you prune it right at the base?

There are 2 green curly things sticking out of the bottom of my orchid, they have since dried up. What were they? And what should I do if any appear again?
